Truffle Cashews
Ingredients:
6 cups raw organic cashews
3 Tbsp ghee
3 Tbsp truffle salt
drizzle of truffle oil (optional)
Assembly:
Preheat oven to 325º and line large baking sheet with parchment paper
On the stove over medium low heat in a large pot melt ghee. Once ghee is melted turn off heat, sprinkle salt over the melted ghee, add nuts and stir or toss to coat. I use a flat wood spoon to stir the nuts and coat with the ghee and salt mixture. Once coated put nuts on prepared baking sheet in a single layer and bake for 12 to 15 minutes deepening on your oven. The truffle cashews are very aromatic when they are done roasting.
Let cool and enjoy! Store in glass jars with air tight lid. Truffled Cashews will remain fresh up to 30 days, stored airtight containers in a cool dry place.

The majority of the fat they do contain is from oleic acid, which is a monounsaturated oil that has documented health benefits to protect against heart disease and cancer. Be picky when selecting cashews, look for a smooth firm whole nuts. Avoid cashew pieces and shriveled looking nuts. If you can smell the nuts for freshness. If nuts are packaged look for packing date on the package. Buying bulk nuts, look for covered, dry bins. Cashews can be stored in airtight containers in the refrigerator up to six months or frozen up to one year to maintain freshness and nutritional value.

Truffle Cashews are a treat! Cashews and truffle salt can both be on the pricey side of ingredients. When I purchase cashews I always look for whole versus pieces. I do buy in bulk and I look for them when they are on sale. When buying nuts in bulk or any item, if you don’t see what you are looking for ask your supplier/grocer. My experience has been they are more than happy to work to get you the quality you want. I typically make truffle cashews for celebrations or gifts around the holiday season. They can be enjoyed year round. The recipe can be made in smaller quantities. Such as 2 cups cashews, 1 tablespoon ghee, 1 tablespoon truffle salt. I hope you enjoy these amazing nuts as much as I do! It will be tempting to eat an entire jar..keep in mind a serving size is typically a 1/4 cup.
