Mayonnaise & Ranch Dressing

Mayonnaise

Ingredients:

  • 2 large egg yolk

  • 1 tsp fresh lemon juice

  • 1 tsp white vinegar or raw apple cider vinegar

  • 1/2 tsp salt

  • 1/4 tsp Dijon mustard or mustard powder (optional)

  • 3/4 cup Avocado oil or neutral oil of choice

Instructions:

  1. Place first 5 ingredients in a blender or food processor, blend on low to combine all the ingredients.

  2. Once combined leaving the blender on low add the oil one drop at a time until the mixture begins to thicken. Once it appears to be thickening you can add the remaining oil in a slow steady stream. Store in a glass jar or container in the refrigerator until ready to use, if using mayo for ranch dressing leave in blender and proceed as follows

  3. Mayo can be stored in the refrigerator for 3 to 5 days. Store in the refrigerator not the door of the refrigerator to prolong the shelf life.

Ranch Dressing

Ingredients:

  • 1 cup Mayo (recipe above)

  • 1/2 cup coconut milk full fat

  • 3 cloves of garlic crushed and chopped or pressed

  • 4 Tbsp finely chopped fresh parsley*

  • 3 Tbsp finely chopped fresh chives*

  • 3 Tbsp finely chopped fresh dill*

  • Juice of 1 lemon

  • 1/2 to 1 tsp onion powder

  • 1/2 tsp sea salt

*Dried herbs can be substituted for fresh herbs.Depending on the freshness of your dried herbs, my recommendations are: 3 to 4 tsp dried parsley and 2 to 3 tsp dried chives and/or dill.

Instructions:

Place all ingredients in blender and blend on low to combine or add all ingredients to glass jar and stir or shake to combine. Let dressing rest for at least 1 hour to incorporate flavors before use. Dressing can be stored for 5 to 7 days in the refrigerator, not the door of the refrigerator.
